| dc.description.abstract | Ecuador posee una amplia diversidad cultural. El pueblo indígena Kichwa muestra una gran riqueza en sus prácticas culturales relacionadas con la preparación de alimentos y bebidas, las cuales han perdurado a lo largo del tiempo y están estrechamente vinculadas a su territorio. Esta investigación identifica dieciocho alimentos tradicionales y cuatro bebidas (tres fermentadas y una no fermentada) dentro de su repertorio culinario. Estos alimentos y bebidas presentan un valor social y cultural significativo entre la población indígena. La mayoría de estas preparaciones tienen como ingrediente principal el maíz (Zea mays), junto con otros productos como el zambo (Cucurbita ficifolia), la papa (Solanum tuberosum), la haba (Vicia faba), el melloco (Ullucus tuberosus) y la oca (Oxalis tuberosa). Ciertas bebidas, como el champús, la chicha del Yamor y la chicha de jora, son reconocidas por su importancia en rituales, derivada de su cosmovisión y de su herencia prehispánica y colonial. En conclusión, este artículo presenta una lista de alimentos y bebidas tradicionales que contribuyen a una dieta saludable. | es_EC |

| dc.description.abstract-en | Ecuador has a wide cultural diversity. The Kichwa indigenous people show a richness in their cultural practices in the preparation of food and beverages that have persisted over time and are linked to their territory. This research identifieseighteen traditional foods and four beverages (three fermented and one non-fermented) with in their culinary repertoire. These noted food sand beverage shold social and cultural valueamong theindigenous population. Most of these preparations have maize (Zea mays) as their main ingredient, along side others such as zambo (Curcubita ficifolia), potatoes (Solanum tuberosum), fava vean (Vicia faba), mellocos (Ullucus tuberosus) and oca (Oxalis tuberosa). Certain beverages like Champús, Chicha del Yamor and Chicha de Jora are recognized for their significance in rituals, stemming from their world view and pre-Hispanic colonial heritage. To conclude, this article presents a list of traditional foods and beverage that contribute to a healthy diet. | es_EC |
